Paneer Masala

Ingredients

Besan/gramflour- 1 tbsp
Paneer Pieces- 250g
Saras paneer masala- 1 tbsp
Kashmiri chilly powder- 1½ tsp
Turmeric powder- ¼ tsp
Cumin seeds- 1 tsp
Cinnamon- 2
Cloves- 3-4
Dry red chillies- 2-3
Asafoetida- ½ tsp
Cardamom- 2
Bayleaf- 1
Finely chopped onions- 3
Crushed ginger garlic – 2 tbsp
Crushed tomatoes- 4
Coriander powder- 1 tsp
Cumin powder- ½ tsp
Garam masala- ½ tsp
Curd- 3-4 tbsp
Green chillies- 3-4
Kasoori Methi- 1 tsp
Ghee/ Oil- 2 tbsp
Salt to taste

Method of preparation

Marinate the paneer cubes with ½ tsp of chilli powder, ¼ tsp turmeric powder, and a pinch
of salt. Leave it aside for 15 to 20 minutes.
Take a pan and heat one tbsp of ghee. Fry the marinated paneer cubes. Keep them aside. In
the same pan add one more tbsp of ghee. Add 1tsp of cumin seeds. Then add some cinnamon,
cloves, dry red chillies, cardamom and bayleaf. Put ½ tsp of asafoetida powder. Saute 3 finely
chopped onions for 3 -5 minutes. Add salt to taste. Add 2 tbsp of ginger garlic paste. Saute well.
Add chilli powder, coriander powder, cumin powder, garam masala, Saras paneer masala and
besan / gram flour in prescribed quantities. Saute it well. Add crushed tomatoes. Cook it on medium
flame while covering with a lid. Add a little water and mix well. Add 3 to 4 tbsp of curd. Mix it
well. Now add green chillies, Kasoori Methi and water for the gravy. Mix it well. Add fried paneer
to the gravy and mix it well.Cover with a lid and cook for about 2 to 3 minutes. Garnish with
coriander leaves and serve hot.
