Beef – 1 kg
Finely chopped ginger- one big piece
Finely chopped garlic- 10 cloves
Finely chopped onion- 1
Chopped coconut pieces- half coconut
Sliced small onion- 10
Green chillies chopped- 3 to 4
Saras beef ularthu masala- 3 tablespoon
Saras pepper powder- 1 tablespoon
Saras turmeric powder- ½ tablesoon
Saras coriander powder- 1½ tablespoon
Saras chilli powder- ½ tablespoon
Saras garam masala- ½ tablespoon
Lemon juice- 2 tablespoons
Curry leaves- 2 strands
Oil- 4-6 tablespoons
Cinnamon- 2 pieces
Cardamom- 4 -5
Clove- 3 to 4
Fennel seeds- 2 tablespoons
Take 1 kg of beef and marinate it with Saras beef ularthu masala, turmeric powder, chilli
powder, coriander powder,pepper powder and garam masala in prescribed quantities. Add 2
tablespoons of lemon juice, chopped ginger, half of chopped garlic, half of chopped onion, green
chillies, curry leaves and salt to taste. Cook the entire contents in a pressure cooker until the meat
become soft and tender.
In a pan heat 4 to 5 tablespoons of oil. Add sliced small onions and chopped coconut pieces.
Saute it well until it become golden brown. Add a pinch of salt. Then add the cooked beef into this
and saute it well until the beef pieces and the entire gravy gets dry.
In the mean time, take another pan and dry roast the above prescribed quantities of
cinnamon, cardamom, clove and fennel seeds. Crush it and put it in the beef ularthu and mix
evenly . In the same pan pour some oil and fry the left over garlic and curry leaves. Add these in
the beef ularth along with the left over onion slices. Saute well. Yummy, spicy beef ularthu is ready
to serve.
