Vegetables- 1 cup
(Carrot, potato, beans, green peas and sweet corn)
Saras vegetable masala- 2 tsp
Onion-2
Tomato- 2
Green chilli- 3
Cardamom- 1
Cloves- 2
Cinnamon- small
Kasurimethi- ¼ tsp
Fennel seeds- ¼ tsp
Ginger- small
Garlic- 3
Kashmiri chilli powder- 1 tsp
Coriander powder- 1tsp
Turmeric powder- ¼ tsp
Fresh cream- 2 tbsp
Oil or Butter- 2 tbsp
Water- 2 cups
Coriander leaves- ¼ bowl
Salt to taste
Sugar- 2 pinch
Take a pan and heat. Pour 2 tbsp of oil or butter. Once the oil is hot, add finely chopped
onion, a small piece of finely chopped ginger, 3 cloves of chopped garlic and 2 sliced green chillies.
Add ¼ tsp of fennel seeds, cinnamon, cloves ,cardamom and ¼ tsp of Kasurimethi. Saute well until
onion turns light brown in colour. Then add 2 finely chopped tomatoes. Add salt to taste. Cover and
cook well. When tomatoes are done, add ¼ tsp of turmeric powder, 1 tsp of Kashmiri chilli powder,
1 tsp of coriander powder and Saras vegetable masala 2 tsp. Saute well. Add 1 cup of hot water.
Boil the contents and add a pinch of sugar. Now add the chopped vegetables. Cover with a lid and
cook in medium flame. Stir occasionally. Add 2 tbsp of fresh cream. Mix it well. Put the flame off
when the gravy is thick. Garnish with coriander leaves.
