Bhindi Masala

Ingredients

Lady's Finger- 250 g
Onion- 1finely chopped
Tomato- 2
Green chilli- 1 chopped
Garlic chopped- 2 tsp
Ginger chopped- 2 tsp
Bay leaf- 1
Cardamom – 1 pod
Cloves- 3
Cinnamon- 1 inch piece
Kasuri methi- ¼ tsp
Coriander leaves- ¼ cup
Turmeric powder- ¼ tsp
Chilli powder- 2 tsp
Cumin powder- 1 tsp
Coriander powder- 1 tsp
Saras curry powder- 1 tsp
Garam masala- ¼ tsp
Curd – ½ cup
Water- 1 cup
Oil- 4 tbsp
Sugar- ½ tsp
Salt to taste

Method of Preparation

Take a pan and heat 2 tbsp of oil. Roast 250 g of lady's finger. Add salt to taste. Keep it
aside.
Heat 2 tbsp of oil. Put 1 Bay leaf, 1 pod of cardamom, 3 cloves and one inch piece of
cinnamon. Add 2 chopped onion. Saute well until it become pale pink. Add 1 chopped green chilli,
2 tsp of chopped garlic and 2 tsp of chopped ginger. Saute it until raw smell disappears. Crush 2
tomatoes in a mixer grinder to make it a fine puree. Add the puree into sauteed onion. Mix well.
Add ¼ tsp of turmeric powder, 2 tsp of chilli powder,1 tsp cumin powder, 1 tsp of coriander
powder, 1 tsp of Saras curry powder and salt to taste. Mix well. Add ½ cup of curd. Mix well. Now
add 1 cup of water. Mix well. Add the fried lady's finger. Mix it with the gravy. Add ¼ tsp of garam
masala and ½ tsp of sugar. Cover and cook for 10 minutes. Put ¼ tsp of kasuri methi. Mix well.
Garnish with coriander leaves.
