Vattayappam

Ingredients

  • Saras roasted rice powder - 3 cups
  • Garlic- 1 clove (optional)
  • Cardamom powder- ½ teaspoon
  • Sugar- 1 cup or grated jaggery- 1 cup
  • Grated coconut- 2 cups
  • Yeast- ¼ teaspoon
  • Ghee/Butter/Oil- 2 teaspoon
  • Cashew nut- 5- 10
  • Raisins- 5-10
  • Water- 3 to 4 cups
  • Salt to taste

Method of preparation


Take ¼ cup of saras roasted rice powder in a pan and mix it with 1 cup of water. Put it on the stove on medium flame and stir well until it become a thick paste. Keep it aside to get cooled. In a mixer grinder mix 2 cups of grated coconut, ½ teaspoon of cardamom powder, 1 clove of garlic(optional), and 1 cup of water. Into this add the previously made rice batter, rest of the roasted rice, 1 cup of sugar or jaggery, ¼ teaspoon of yeast and a pinch of salt with 1 to 1½ cups of water. Mix it well in the mixer grinder for about 1 minute. Keep it aside for about 5 to 6 hours to ferment.

Take a cake tin or round steel plate. Spread some ghee/butter/oil on the plate. Place the plate on the steamer. After the water is boiled pour the fermented rice batter on the plate. Add some cashew nuts and raisins. Cover the steamer and cook it in medium to low flame for about 20 to30 minutes. Take it from the plate when it is cooled. Serve delicious vattayappam after cutting it into pieces.
